These pancakes are so fluffy and so delicious, with a sweet hint of coconut you are sure to love.
1 mango
2 kiwis
2 cup all purpose flour
3 tbsp baking powder
1/3 cup maple syrup
1 1/4 c non-dairy milk
2/3 c coconut milk
1/4 tsp salt
Peel and dice the mango and kiwi. Add flour, baking powder, maple syrup, non-dairy milk, coconut milk, and salt to a large bowl and whisk together.
Heat 1 tsp oil in large non stick pan
over medium heat and cook pancakes to your liking.
Top pancakes with mango, and kiwi and devour!
