Simple. Delicious. Shakshuka


INGREDIENTS


2 tbsp avocado oil

1 red onion, chopped

2 cloves garlic, chopped

2 cans fire roasted tomatoes

2 roasted red chillies (found at trader joe's, chopped)

1 cup roasted red pepper & tomato soup (also found at joe's)

fresh basil, chopped

salt & pepper

crushed red pepper

6 eggs


INSTRUCTIONS


Preheat oven to 375

Heat your oil in a large oven safe pan

Saute your garlic & onions until translucent

Add in your red peppers, tomatoes, and soup

Add in salt, pepper and crushed red pepper

Simmer for 5-8 mins for flavor to develop

Turn off heat and crack 6 eggs gently into sauce

Bake for 8 mins or more if you like your eggs more done

Enjoy with some crusty sourdough or naan
